Beef Quesadillas Recipe

Here’s a super-easy 3-ingredient main dish recipe that’s a snap to make!

Ingredients:

Ground Beef
Flour Tortillas (burrito size)
Shredded cheese

Directions:

Cook ground beef in a non-stick frying pan for 5 minutes, or until cooked through (no longer pink).  Remove cooked ground beef from the frying pan into a bowl.

Put flour tortilla on a frying pan.  Sprinkle shredded cheese on 1/2 of the tortilla.  Add some ground beef on top of the cheese.  Top the ground beef with another layer of shredded cheese.  Fold the empty half of the tortilla over the cheese, so the tortilla is folded in half.

The cheese on both sides “glues” the ground beef to the tortilla, so the whole thing doesn’t fall apart :)

Cook the filled tortilla over medium-high heat for 3 minutes (or until golden-brown), then flip with a spatula and cook on the other side for 3 minutes or until done.

Make more beef quesadillas until you run out of the filling.

Garlic Beef With Green Peppers Recipe

This garlic beef tastes just like garlic beef from a Chinese restaurant.  Who need the takeout when you can make authentic tasting garlic beef at home :)  This garlic beef recipe is very quick and easy to make.   For a perfect side dish, use the rice cooker to make the rice.

Ingredients For Garlic Beef With Green Peppers:

1 lb of beef, chopped
1 onions, chopped
2 green peppers, chopped
1/2 cup bottled teryaki sauce
4 cloves garlic, minced
1/2 tsp ground black pepper
1/8 tsp ground red pepper
2 tbsp oil

Directions How To Make Garlic Beef With Green Peppers:

Put beef in a bowl and pour teryaki sauce over it.  Toss to coat.  Leave to marinate at room temperature for 20 minutes.

Meanwhile, heat 1 tbsp of oil in a large non-stick frying pan.  Add green peppers and onions, and cook, stirring periodically, for 5 minutes, or until peppers cooked through.  Add salt to taste and remove the peppers and onions from the frying pans into a clean bowl and set aside.

When the beef is done marinating, heat another 1 tbsp of oil in a large non-stick frying pan.  Add minced garlic and stir for 30 seconds.  Add the beef and stir.  Cook, stirring periodically, for 5 minutes or until the beef is no longer pink.  Add cooked green peppers and onions and stir.  Sprinkle with black pepper and red pepper and stir.  Add salt to taste if necessary.

Korean Barbeque BBQ Beef (Bulgogi) Recipe

This recipe for Bulgogi (Korean Barbequed Beef) tastes as close to the real thing as it can get for the home cook!

Ingredients For Korean BBQ Beef Recipe:

1 lb beef, thinly sliced
1/2 cup soy sauce
3 tbsp sugar
2 tbsp sesame oil
1/4 tsp pepper
3 garlic cloves, minced
1 onion, chopped
1 tbsp vegetable oil

Directions For Korean Barbeque Beef Recipe:

Make the sauce for korean BBQ beef: mix soy sauce, sugar, sesame oil, pepper and minced garlic.

Put the sliced beef and chopped onion in a bowl and pour sauce over it.  Leave to marinate for 20 minutes at room temperature.

Heat the 1 tbsp of oil in a large non-stick frying pan over medium-high heat.  Add beef and onion, and stir-fry for 5 minutes or until cooked through.

Serve Korean BBQ Beef over white rice.

Beef Enchiladas Recipe

This beef enchiladas recipe tastes very authentic, and goes really well with guacamole!

Ingredients For Beef Enchiladas Recipe:

10 corn tortillas
1 lb ground beef
1 onion, chopped
4 garlic cloves, minced
1 can (8 oz) tomato sauce
1 bunch of cilantro (leaves chopped, stems discarded)
1 package (8 oz) shredded cheddar cheese
1 tbsp chili powder
1 tsp cumin
1 tbsp oil
Salt and pepper to taste

Directions How To Make Beef Enchiladas:

Heat the oil in a non-stick frying pan over medium-high heat.  Add chopped onion and cook, stirring periodically, for 5 minutes.  Add ground beef, sprinkle with chili powder and cumin, and stir to combine. Cook, stirring periodically, for 7 minutes, or until cooked through (no longer pink).

Add garlic and 1/2 of the can of the tomato sauce.  Stir and cook for 3 minutes.

Turn off the heat.  Add chopped cilantro and 1/2 cup of shredded cheese, and stir to combine.   Add salt and pepper to taste. The filling for the beef enchiladas is ready.

Add water to the remaining tomato sauce in a can so the can is full, and stir with a spoon.   Pour 1/4 of the tomato sauce and water mixture on the bottom of the 8×12 baking dish, and spread so it covers the bottom of the dish.

Heat the corn tortillas in the microwave: 3 at a time, for 30 seconds.  After you heat the first 3 tortillas, assemble 3 enchiladas, then heat 3 more tortillas, etc.

To assemble the enchilada, put a heaping tablespoon of the beef filling on top of the tortilla, then roll the tortilla into a roll.  Put on a baking dish seam side down.  Put all assembled enchiladas in that baking dish next to each other.

Pour the remaining tomato sauce (that was mixed with water) on top of the enchiladas.  Sprinkle with the remaining shredded cheese.  Bake at 375 F for 30 minutes.

Pasta With Meat Recipe

Pasta With Meat a.k.a Pasta A-La-Sailor a.k.a Macaroni Po-Flotski

This recipe is Russian, and the Russian name of it is “Macaroni Po-Flotski” which translates as “Pasta A-La-Sailor”.  It is made with the items that are always around (pasta, ground meat and onion), so it’s one of those great “emergency meals” :)

Ingredients:

Pasta (tubular shapes work best) – 1 lb
Ground beef or other ground meat – 2 lbs
2 onions, chopped.
Oil
Salt and pepper to taste

Directions:

Cook the pasta according to package directions. 

Heat 1 tbsp of oil on a non-stick frying pan over medium-high heat.  Add the onions, and cook, stirring occasionally, until soft and golden-brown.  Add the ground meat, and cook, stirring occassionally, until no longer pink.  Add salt and pepper to taste.

Optional step: process cooked ground meat and onion mixture in a food processor.

Heat another 2 tbsp of oil in a large non-stick frying pan.  Add cooked pasta and cooked ground meat and onion mixture.  Stir until the pasta is coated with oil and mixed with the ground meat.

Shepherd’s Pie Recipe

Shepherd’s pie is one of those dishes that usually doesn’t require any special shopping trips - the ingredients are commonly found in the pantry and the freezer.  If you don’t have green peas, just substitute with any other chopped vegetables or canned beans – or omit them altogether.  The main components of the shepherd’s pie is a layer of meat on the bottom and a layer of mashed potatoes on top.

Ingredients:

1 lb of ground meat
1 onion, chopped
1 cup of frozen green peas, defrosted
7 medium potatoes
1/2 cup milk
1 tbsp oil
1 egg, whisked
salt and pepper to taste

Directions:

Preheat the oven to 375F.

Boil the water in a large pot for the potatoes.  Peel the potatoes, cut into quarters, put in boiling water and boil for 25 minutes.  Remove the potatoes from the water (drain them in a colander).

Put the potatoes in a bowl, add the milk and mash with a potato masher until smooth.  If necessary, add more milk.  Add salt and pepper to taste.

While the potatoes are boiling, heat the oil in a non-stick frying pan over medium-high heat.  Add the onions and cook, stirring periodically, for 5 minutes.  Add the ground meat and cook, stirring periodically, for 7 minutes, or until the meat is cooked through (no longer pink).  Add the peas and stir.

Put the meat mixture on the bottom of a large non-stick baking dish (spread it so all the bottom of the dish is covered).  Spread the mashed potatoes on top of the meat mixture.  Brush the top of the potato layer with the whisked egg.

Put in the oven and bake for 30 minutes.

Meatballs Recipe

 
These are the most tender and juicy meatballs I’ve ever tasted!

Ingredients:
1 lb ground meat (beef or turkey)
1 onion, minced
1/4 cup bread crumbs
3 tbsp water
1/2 tsp salt
1/4 tsp ground pepper
1 tbsp oil
1 jar (26 oz) pasta sauce

Directions:

In a bowl, combine the ground meat, minced onion, bread crumbs, water, salt and pepper.

Heat the oil in a large non-stick pan over medium-high heat. Form the meat mixture into balls and put them on a frying pan. Cook for 3 minutes, then turn the meatballs over with a spatula and cook for another 3 minutes.

Pour the pasta sauce over the meatballs. Reduce the heat to low, cover and cook for 30 minutes.
