How To Make Oven Roasted Parmesan Zucchini

This baked Parmesan garlic zucchini is very easy to make.  All you need to do is cut the zucchini lengthwise into quarters, toss with garlic and olive oil, sprinkle with Parmesan and herbs and put it in the oven.  After the time beeps, take these delicious baked zucchini wedges out of the oven and enjoy!

These Parmesan garlic baked zucchini wedges are absolutely amazing! Rubbed with garlic and olive oil, sprinkled with Parmesan cheese and oven roasted to perfection! This will become your favorite way to eat zucchini ever!

Ingredients
  • 2 zucchini
  • ¼ cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp oregano
  • ½ tsp salt
  • ¼ tsp pepper
Instructions
  1. Preheat the oven to 425F. Line a baking sheet with parchment paper.
  2. Cut zucchini lengthwise into quarters and put in a bowl.
  3. Pour olive oil over zucchini and add minced garlic. With your hands, rub the garlic and olive oil all over the zucchini.
  4. Put the zucchini on the baking sheet in a single layer, skin side down.
  5. Sprinkle the zucchini with salt, pepper, Parmesan cheese and oregano.
  6. Put the zucchini in the oven on the top rack, and bake for 15 minutes.
  7. Switch the oven to Broil, and bake for another 4 minutes, or until zucchini is golden brown.
  8. Serve warm. Optionally, you can sprinkle zucchini with an extra 1 tbsp Parmesan cheese right before serving.

This is my favorite zucchini recipe! Parmesan and garlic makes it perfect!

    Loving your recipes, especially all EZ PZ they all seem to be. Just one question in reference to the Parmesan Garlic Roasted Zucchini. The recipe reads to place on top rack. Does this mean top rack positioned in the center of the oven, or do I need to move the top rack up to the highest position on my oven.

    Hello. We are trying your recipe for the first time tonight. The instructions state to set the oven to broil, but does not specify Hi or Low. Which is it? Out of precaution I set it to Low since it’s a vegetable so we shall see if I guessed right. I was trying to find a low carb way to bake these and still have flavor, that is how I found your recipe. Most recipes I came across used bread crumbs, panko and/or flour as a coating. Hope my family enjoys this. I shall follow up soon.
